Fat keeps us warm and provides energy, aids in the absorption of vitamins and helps maintain healthy skin and hair. Foods from both animals and plants contain fat and, consumed in moderation, are critical to our good health. But not all fats are the same... Unsaturated fats, which remain liquid at normal temperatures, are found in oily fish, vegetable oils and nuts. Saturated fats, which maintain a more solid form, are found in many dairy products, fatty meats and coconut oil, for example. Trans fat is made when manufacturers add hydrogen to vegetable oil in a process called hydrogenation.
